Vinification of the Doppio Passo Appassimento from CVCB
This powerful red wine from Italy is made from the Primitivo grape variety. The grapes for this Doppio Passo from Italy are harvested exclusively by hand at optimum ripeness. After manual harvesting, the grapes are quickly transported to the winery. Here they are selected and carefully crushed. Fermentation then takes place in large oak barrels at controlled temperatures. Once fermentation is complete, the Doppio Passo Appassimento is aged in oak barrels for a further 12 months.
