Vinification of the CVCB Doppio Passo Grillo Sicilia
The starting point for the first-class and wonderfully elegant Doppio Passo Grillo Sicilia cuvée from CVCB is Catarratto, Chardonnay and Grillo grapes. The grapes for this white wine from Italy are harvested exclusively by hand at optimum ripeness. After the harvest, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of fermentation, the Doppio Passo Grillo Sicilia can continue to harmonize on the fine lees for several months.
