Vinification of the Doppio Passo Primitivo from Carlo Botter
The key difference between the Doppio Passo and other red wines from southern Italy is the double fermentation or double pass (doppio passare). Some of the grapes are harvested young and fermented on the skins. Meanwhile, the remaining grapes ripen on the vine for a long time, achieving a high concentration of fruit, aromas and sugar. After fermentation of the first batch, the late-picked grapes are added and the whole mash is fermented a second time. This creates a particularly dense and aromatic wine with the Doppio Passo.
