Vinification of the El Niño de Campillo Rioja from Bodegas Campillo
This powerful red wine from Spain is made from the Tempranillo grape variety. After the grape harvest, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. Then fermentation takes place in small wood at controlled temperatures. After the end of fermentation, the powerful El Niño de Campillo Rioja is aged for another 6 months in American oak barriques. Once the wine is finished, the El Niño de Campillo Rioja is gently harmonized.
