Vinification of the Barbera d'Alba by Elio Grasso

The Barbera grapes are harvested exclusively by hand. After several days of maceration with daily punching down of the grapes and malolactic fermentation, the wine is aged in French oak barriques, followed by at least a further 8 months in the bottle.
