Barolo DOCG 2014 - Elio Grasso
The Barolo Gavarini Vigna Chiniera DOCG by Elio Grasso is a cru from the vineyard of the same name, Vigna Chiniera. In the glass it shines in a noble red. On the nose, this elegant Barolo has an intense bouquet of wild berries, spices, coffee and mineral notes. Dry on the palate, it is particularly delicate, velvety and complex on the palate, with a racy acidity. Long, persistent finish with a lot of finesse. A highly decorated and characteristic Barolo!
Manufacture of the Barolo by Elio Grasso
After the manual harvesting of the Nebbiolo grapes in the vineyard of Vigna Chiniera, the temperature-controlled maceration and alcoholic fermentation takes place in stainless steel tanks. The hat is gently raised daily to obtain a maximum of tannins, extract and colour. After malolactic fermentation, the wine matures in 25 hectolitres of Slavonic oak barrels for about 30 months. After bottling, usually in August, the Barolo Gavarini Vigna Chiniera is stored in the cellar for another 8 to 10 months before being sold.
Food pairing for the Barolo Gavarini Vigna Chiniera
Enjoy this impressive Barolo by Elio Grasso as an excellent accompaniment to stewed beef and game dishes.
"(....) I can't imagine a winter without Barolo, at least not without Elio Grasso's one. This light, morbid scent, this berry, truffle and tar aroma, this decadent sweetness - a wine that transforms the world, at least for a moment."Jens Priewe in Der "Feinschmecker."
