Here, the vines dig their roots deep into clay and limestone soils. The grapes for Dolcetto d'Alba dei Grassi are harvested exclusively by hand at optimum ripeness, without the help of coarse and less selective harvesters. After manual harvesting, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of fermentation, the Dolcetto d'Alba dei Grassi can continue to harmonize on the fine lees for a few months.
