Vinification of the Casa Rojo Enemigo Mio
The basis for the balanced Enemigo Mio from Murcia are grapes from the Garnacha grape variety. The grapes grow under optimal conditions in Murcia. The vines here dig their roots deep into soils of clay, sand, limestone, shale and gravel. After the grape harvest, the grapes are immediately sent to the winery. Here they are selected and carefully broken up. This is followed by fermentation in small wood at controlled temperatures. Once fermentation is complete, the Enemigo Mio is aged for several months in French oak barrels.
