Vinification of the Enigma Appassimento Sangiovese Rubicone from Biscardo
This powerful red wine from Italy is made from the Sangiovese grape variety. After the grape harvest, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks and small wooden barrels at controlled temperatures. Vinification is followed by ageing for several months in oak barrels.
