Vinification of Casa Santos Lima Espiga Reserva.
The basis for the balanced Espiga Reserva from Portugal are grapes from the Castelão, Syrah, Tempranillo and Touriga Nacional varieties. The grapes grow in optimal conditions in Extremadura. Here, the vines dig their roots deep into soils of limestone and clay. After harvesting, the grapes quickly reach the winery. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. The fermentation is followed by aging for several months on the fine lees before the wine is finally bottled.
