The fact that the Pinot Noir grapes thrive under the influence of a rather cool climate also has a very high influence on the ripening of the vintage. This results, among other things, in particularly long and even grapes and rather moderate alcohol content in the wine. Following the manual harvest, the grapes are brought to the winery by the fastest route. Here they are sorted and carefully broken up. The fermentation of the base wines follows.
