In the glass, the Finca Las Comas of José Pariente reveals a bright pale yellow color. The color of this white wine also shows golden yellow reflections in the center. After the first swirl, one can perceive a first-class balance in this white wine, because it does not stand out on the walls of the glass neither watery nor syrupy or liqueur-like. With a little time in the glass, this Old World white wine presents wonderfully expressive aromas of lemon, pink grapefruit, lemongrass and orange, rounded out by forest floor, cinnamon and vanilla contributed by aging in wooden barrels.
This wine delights with its elegantly dry flavor. It has been bottled with exceptionally little residual sugar. This is a real quality wine, which clearly stands out from simpler qualities and so this Spaniard enchants naturally with all dryness with the finest balance. Taste does not necessarily need a lot of residual sugar. Balanced and multifaceted, this light white wine presents itself on the palate. In the finish, this matured white wine from the wine-growing region of Castile - Leon finally inspires with beautiful length. Once again, hints of pink grapefruit and grapefruit show.
Vinification of the José Pariente Finca Las Comas
This balanced white wine from Spain is made from the Verdejo grape variety. Finca Las Comas is an Old World wine through and through, as this Spaniard breathes an extraordinary European charm that clearly underscores the success of Old World wines. The maturation of the grapes for this Verdejo wine is influenced to a considerable extent by the climate of the growing region. In Castile - León, the grapes thrive in a warm climate, which is reflected, among other things, in particularly well ripened grapes and a rather high must weight. At the time of optimal ripeness, the grapes for Finca Las Comas are harvested exclusively by hand without the help of coarse and less selective full harvesters. After harvesting, the grapes are immediately transferred to the press house. Here they are selected and carefully broken up. Then fermentation takes place in large wood at controlled temperatures. After the end of fermentation, the Finca Las Comas is aged for several months in 1000 liter oak barrels. The aging in wooden barrels is followed by a considerable aging in bottle, which makes this white wine even more complex.
