In the glass, the Finca Las Comas of José Pariente reveals a bright pale yellow color. The color of this white wine also shows golden yellow reflections in the center. Vinification of the José Pariente Finca Las Comas
This balanced white wine from Spain is made from the Verdejo grape variety. Finca Las Comas is an Old World wine through and through, as this Spaniard breathes an extraordinary European charm that clearly underscores the success of Old World wines. The maturation of the grapes for this Verdejo wine is influenced to a considerable extent by the climate of the growing region. In Castile - León, the grapes thrive in a warm climate, which is reflected, among other things, in particularly well ripened grapes and a rather high must weight. At the time of optimal ripeness, the grapes for Finca Las Comas are harvested exclusively by hand without the help of coarse and less selective full harvesters. After harvesting, the grapes are immediately transferred to the press house. Here they are selected and carefully broken up. Then fermentation takes place in large wood at controlled temperatures. After the end of fermentation, the Finca Las Comas is aged for several months in 1000 liter oak barrels. The aging in wooden barrels is followed by a considerable aging in bottle, which makes this white wine even more complex.
