Once perfect physiological ripeness has been ensured, the grapes for the Fossati Barolo are harvested exclusively by hand without the help of coarse and less selective harvesters. After the harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Fermentation then takes place in concrete, small wood and large wood at controlled temperatures. At the end of this process, the Fossati Barolo is aged for a few months in oak barriques.
