The Chablis Premier Cru Fourchaume Domaine from Domaine William Fèvre is a Burgundian white wine of the highest nobility. In the glass unfolds a very aromatic bouquet with fruity and floral notes and varietal mineral nuances in the background. On the palate very elegant, powerful, racy and harmonious with beautifully integrated, balanced acidity. Long, harmonious finish. A Premier Cru Chablis with the power of a Grand Cru!
Vinification of the Chablis Premier Cru
Domaine William Fèvre is considered the best of all Chablis wineries. William Fèvre's chief oenologist has made it his mission to let the wine "speak" through its terroir. The wines impress with terroir- and varietal-typical minerality and finesse.
The Chardonnay grapes for this Chablis Premier Cru are grown in the Domaine's Premier Cru site Fourchaume and are strictly selectively harvested by hand to vinify only the best grapes. After the selective harvest, the grapes are gently pressed and temperature-controlled fermentation and aging. The wine is aged for 13 to 14 months, 40 to 50% of the vintage in used French oak barrels, the remaining must in stainless steel tanks. for 5 to 6 months the wine remains in the wooden barrels on the fine lees (sur lie). The end of the aging process takes place for the finished wine in small stainless steel tanks.
