This wine clearly focuses on one grape variety, and that is Cesanese d'Affile. For this exceptionally powerful single-varietal wine from Giacobbe Alberto, only top-quality grapes were harvested. In Lazio, the vines that produce the grapes for this wine grow on soils of clay. After the manual harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally drawn into bottles.
