The multi-award winning Crémant Grande Cuvée 1531 from Sieur d'Arques is considered one of the best sparkling wines in the South of France and was named after the year in which bottle fermentation was invented or discovered in France.
In a brilliant white gold, this Crémant de Limoux appears in the glass. A fine perlage carries aromas of green apple, pear and honey, as well as floral notes of white flowers. On the palate, the finesse of this sparkling wine is evident in a fine, restrained acid structure and an excellent mousseux. Again, its freshness unfolds, along with aromas of honey and green apple, as well as an elegant minerality. A medium finish once again reveals the lively character of this classic.
Vinification of the Aimery Grande Cuvée 1531 Crémant
The award-winning crémant of the Sieur d'Arques winegrowers' cooperative pays homage to an important historical event. In fact, the first official mention of a sparkling wine from France dates back to 1531. At that time, monks of St. Hilaire Abbey discovered bottle fermentation by leaving half-fermented grape must in sealed bottles. This continued to ferment. Since the carbon dioxide could not escape, it dissolved in the wine and made it sparkling.
The Sieur d'Arques vineyards are located in Langedoc and are composed of four different terroirs: Autan, Méditerranéen, Océanique and Haute-Vallée, forming the viticultural basis for Crémant de Limoux. Depending on the wishes and weather conditions, the oenologists of the house can access the yields of the climatically different terroirs. The Crémant 1531 Grande Cuvée is composed of Chardonnay, Chenin Blanc and Pinot Noir grapes. These are harvested earlier than the grapes of the still wines to ensure a steadfast acid structure. The base wines are then fermented a second time according to the "Méthode traditionelle" - i.e. in classic bottle fermentation. The Grande Cuvée 1531 is then left on its lees for 12 months.

The Grande Cuvée 1531 is an excellent aperitif. It also goes well with hors d'oeuvres or desserts, such as créme brûlée.
