Vinification of the Josef Ambs Pinot Gris Kabinett
The basis for the balanced Grauer Burgunder Kabinett from Baden are grapes from the grape variety Grauburgunder. In Baden, the vines that produce the grapes for this wine grow on soils of loam and loess. After manual harvesting, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Pinot Gris Kabinett can continue to harmonize on the fine lees for a few months....
