Vinification of the Gris Rosé from Domaine Saint Paul
The starting point for the first-class and wonderfully elegant cuvée Gris Rosé from Domaine Saint Paul are Cinsault and Grenache grapes. At the time of optimal ripeness, the grapes for Gris Rosé are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the harvest, the grapes are immediately sent to the winery. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by aging on the fine lees for several months before the wine is finally bottled.
