Vinification of the Jürgen Ellwanger Hebsacker Linnenbrunnen Pinot Noir GG
This red wine clearly focuses on one grape variety, and that is Pinot Noir. Only immaculate grape material was brought in for this wonderfully balanced single-varietal wine from Jürgen Ellwanger. The ripening of the grapes for this Pinot Noir wine is influenced to a large extent by the climate of the growing region. In Württemberg, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and evenly ripened grapes and rather moderate must weight. At the time of optimal ripeness, the grapes for the Hebsacker Linnenbrunnen Spätburgunder GG are harvested exclusively by hand without the help of coarse and less selective machines. After the harvest, the grapes are quickly transferred to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel at controlled temperatures. The fermentation is followed by a maturation of several months.
