This dry white wine from Contesa di Rocco Pasetti is just the thing for purists who like it absolutely dry. The Passerina comes very close to this, as it was produced with just 2 grams of residual sugar. On the palate, the texture of this light-footed white wine is wonderfully light and crisp. The moderate fruit acidity gives the Passerina a pleasant mouthfeel without lacking freshness. On the finish, this white wine from the Abruzzo wine-growing region finally delights with good length. Once again, there are hints of kumquat and pineapple.
Vinification of the Passerina from Contesa di Rocco Pasetti
The basis for the elegant Passerina from Abruzzo are grapes from the Passerina grape variety. The grapes grow under optimal conditions in Abruzzo. Here, the vines dig their roots deep into soils of sedimentary and weathered rock. The Passerina is also clearly determined by climatic and stylistic factors Abruzzo DOC. This Italian wine can be described as an Old World wine in the best sense of the word, with an exceptionally youthful appearance. After harvesting, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally drawn off.
