The basis for the elegant Huxelrebe Alte Reben Beerenauslese from Rheinhessen are grapes from the Huxelrebe grape variety. The grapes grow under optimal conditions in Rheinhessen. The vines here dig their roots deep into soils of clay. The fact that the Huxelrebe grapes thrive under the influence of a rather cool climate also has an influence on the ripening of the grapes. This results, among other things, in particularly long and uniform grapes and rather moderate alcohol content in the wine. After manual harvesting, the grapes are immediately taken to the winery. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Huxelrebe Alte Reben Beerenauslese can continue to harmonize on the fine lees for a few months....
