The Rosato Salento I Tratturi from Cantine San Marzano comes with a brilliant red of raspberry with ruby reflection. A fresh bouquet of rose, sour cherry and pomegranate flirts with the nose and persists surprisingly long. With a vital fruit at the palate and a well balanced acid the dry Rosato developes a quite full body. I leaves a charming appeal that aquires some esteem.
The Rosato Salento I Tratturi IGT is composed of Negroamaro grapes. This species is an autochrom type of grape in the terroir of Apulien. It gets its deep rose colour through a special cold pressing. During the process one part of the grapes is seperated from the rape right after the pressing. The other half is left with the skin for 12 to 24 hours, when the color is set. Filled into stainless-steel tanks the blending and fermentation of both musts followes.
