Vinification of Fausta Mansio Il Capitano
The starting point for the first-class and wonderfully balanced cuvée Il Capitano from Fausta Mansio are Cabernet Sauvignon and Nero d'Avola grapes. After the hand harvest, the grapes immediately enter the press house. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally bottled.
Recommendation for Il Capitano by Fausta Mansio
This Italian is best enjoyed at a temperature of 15 - 18°C. It is perfect as an accompaniment to ossobuco, veal boiled beef with beans and tomatoes or lamb stew with chickpeas and dried figs.
