The Il Passo Nerello Mascalese from Vigneti Zabu is a balanced, soft and juicy red wine from the Italian wine-growing region IGT Terre Siciliane.
This Sicilian wine presents itself in the glass in a deep ruby red. Opulent aromas of blackberries and red wild berries fill the nose, complemented by delicate floral nuances, Mediterranean herbs and fine wood. The Vigneti Zabu Il Passo is wonderfully aromatic on the palate. The aromas on the nose are joined by even more wild berries, rounded off by a little vanilla and herbal rosemary spice. A wonderfully extracted wine with a full body and a spicy finish.
Vinification of the Vigneti Zabu Il Passo
The basis of Il Passo is first and foremost a relatively low yield of just 70 quintals per hectare, which Vigneti Zabu can guarantee in the Sambuca di Sicilia region. The shoots of the Nerello vines are pruned in such a way that they offer little resistance to the hot Sicilian sun and the African winds, allowing the grapes to dry naturally. This significantly increases both the sugar and extract content of Il Passo grapes.
After around 15-20 days, the grapes for the Vigneti Zabu Il Passo have lost around 15-20% of their weight. They are then crushed and fermented. The Il Passo red wine is then transferred to French and American oak barriques and matured for around 6 months.
