Vinification of Ja-To by Vignato Virgilio
Basis for the first-class and wonderfully powerful cuvée Ja-To by Vignato Virgilio are Cabernet Sauvignon and Merlot grapes. The grapes grow under optimal conditions in Veneto. The vines here dig their roots deep into soils of clay. After harvesting, the grapes quickly reach the winery. Here they are sorted and carefully broken up. Fermentation follows in stainless steel tanks and small wood at controlled temperatures. Once fermentation is complete, the Ja-To is allowed to further harmonize on the fine lees for 12 months.
Feeding recommendation for the Ja-To of Vignato Virgilio
This Italian red wine is best enjoyed tempered at 15 - 18 ° C.. It is perfect as an accompaniment to duck breast with snow peas, boeuf bourguignon or lamb stew with chickpeas and dried figs.
