The Jester Cabernet Sauvignon from the pen of Mitolo from South Australia presents a dense, purple-red colour in the tilted glass. When the glass is swivelled, this red wine reveals a high density and fullness, which can be seen in clear church windows at the edge of the glass. This single-varietal Australian wine flatters in the glass with wonderfully complex notes of lilac, violet, blueberry and perfumed rose. This is accompanied by notes of juniper, garrigue and lovage.
This red wine from Mitolo is the right choice for those who like it dry. But it is never sparse or brittle, as you would expect from a wine beyond the supermarkets. On the palate, the texture of this powerful red wine is wonderfully dense. The Jester Cabernet Sauvignon presents itself fantastically fresh and lively on the palate through its concise fruit acidity. Finally, the finale of this red wine from the South Australia wine growing region impresses with a remarkable aftertaste. The finish is also accompanied by mineral facets of the soils dominated by clay and sandstone.
Vinification of the Mitolo Jester Cabernet Sauvignon
Basis for the powerful Jester Cabernet Sauvignon from South Australia are grapes from the Cabernet Sauvignon grape variety. The grapes grow under optimal conditions in South Australia. The vines here dig their roots deep into soils of clay and sandstone. When they are perfectly ripe, the grapes for the Jester Cabernet Sauvignon are harvested exclusively by hand without the help of coarse and less selective harvesters. After harvesting, the grapes are immediately transported to the press house. Here they are selected and carefully broken up. After fermentation is complete, the Jester Cabernet Sauvignon is aged for 18 months in French oak barrels.
