Vinification of the Gumpoldskirchen tradition by Johanneshof Reinisch
The basis for the balanced Gumpoldskirchen tradition from Lower Austria are grapes from the grape varieties Rotgipfler and Zierfandler. The grapes grow under optimal conditions in Lower Austria. The vines here dig their roots deep into soils of clay, sand and limestone. After the manual harvest, the grapes are immediately transported to the press house. Here they are selected and carefully broken up. Fermentation then takes place in large wood at controlled temperatures. The fermentation is followed by a maturation in oak barrels for 4 months.
