Vinification of Käfer Chardonnay
The basis for the balanced Chardonnay from Sicily are grapes from the Chardonnay grape variety. After harvesting, the grapes are transported to the winery as quickly as possible. Here they are sorted and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Fermentation is followed by maturation on the fine lees for several months before the wine is finally drawn off.
