Vinification of Raúl Pérez Las Gundiñas
The basis for the balanced Las Gundiñas from Spain are grapes from the Mencia grape variety. After the grape harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. This is followed by fermentation in small wood and large wood at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally bottled.
