Vinification of the Le Coq Volant blanc Côtes du Rhône Villages from Domaine de Galuval
The basis for Domaine de Galuval's premium and wonderfully balanced Le Coq Volant blanc Côtes du Rhône Villages cuvée is Clairette, Grenache Blanc, Roussanne and Viognier grapes. The grapes grow in optimal conditions in the Rhône Valley. The vines here dig their roots deep into soils of clay and gravel. The grapes for this white wine from France, at the time of optimal ripeness, are harvested particularly quickly and preferably in the morning to preserve their aromas. After the manual harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. At the end of fermentation, Le Coq Volant blanc Côtes du Rhône Villages is allowed to further harmonize on the fine lees for 4 months.
