The highly rated Les Caillottes from the wine-growing region of the Val de Loire offers itself in the glass in brilliantly shimmering light yellow. After the first swirl, this white wine is characterized by a fascinating lightness that makes it dance nimbly in the glass. Poured into a white wine glass, this Old World white reveals delightfully fragrant aromas of quince, lime, pear and orange, rounded out by lovage, forest floor and garrigue.
This white from Pascal Jolivet is just right for all connoisseurs who like as little sweetness as possible in the wine. At the same time, it is never sparse or brittle, as is appropriate for a wine of this reputation. Light-footed and complex, this silky white wine presents itself on the palate. Due to the balanced fruit acidity, Les Caillottes flatters with a pleasing mouthfeel without lacking freshness. The finish of this youthful white wine from the wine-growing region of the Val de Loire, more precisely from Sancerre, finally convinces with good reverberation. The finish is also accompanied by mineral hints of the soils dominated by marl and limestone.
Vinification of the Pascal Jolivet Les Caillottes
The basis for the elegant Les Caillottes from the Val de Loire are grapes from the grape variety Sauvignon Blanc. In the Val de Loire, the vines that produce the grapes for this wine grow on soils of limestone, silicate rock and marl. Obviously, Les Caillottes is also defined by more than just the Sancerre soil. This Frenchman can literally be described as an Old World wine that is exceptionally fragrant. When perfect physiological ripeness is assured, the grapes for Les Caillottes are harvested exclusively by hand without the aid of crude and less selective machinery. After the harvest, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. The vinification is followed by aging on the fine lees for several months before the wine is finally drawn into bottles.
