The Les Vieilles Vignes Rouge AOP of Domaine du Clos des Fées sparkles in the glass in a ruby red with purple hues and seduces with its expressive bouquet. This contains the aromas of blackberries and blueberries, which are supported by spicy notes of pepper and and herbs, as well as roasted aromas.
This cuvée from Roussilion is extremely complex and dense with a silky tannin structure.
Vinification for the Les Vieilles Vignes Rouge AOP from Domaine du Clos des Fées
This cuvée is made from Grenache, Lledoner Pelut, Carignan and Syrah vines, all of which are at least 50 to 100 years old.
A short maceration at low temperature takes place before fermentation, followed by maceration for 20-25 days. Part of the wine is aged for 12 months in barriques, the rest in traditional concrete tanks. After the assemblage, the wine ages for another 2 months until it is bottled.

Due to its smooth tannin structure, this dry red wine is suitable for immediate drinking, but its true potential develops only after at least three years of bottle aging.
