Vinification of Magna Dolcetto d'Alba by Paolo Manzone
This red wine clearly focuses on one grape variety, namely Dolcetto. Only the best grapes were brought in for this wonderfully balanced single-varietal wine from Paolo Manzone. Once perfect physiological ripeness has been ensured, the grapes for Magna Dolcetto d'Alba are harvested exclusively by hand without the aid of coarse and less selective machines. After manual harvesting, the grapes are transported to the press house as quickly as possible. Here they are sorted and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of this process, the Magna Dolcetto d'Alba can continue to harmonize on the fine lees for a few months.
