Masseria Maime Salento IGT 2015 - Tormaresca
The Masseria Maime Salento IGT of Tormaresca is one of the top wines of the estate. The Negroamaro Masseria Maime shows itself in the glass in intense ruby red, on the nose floral scents of roses and violets, fresh dark fruit such as black cherries, mulberries, followed by spicy notes reminiscent of liquorice anise, cinnamon and cloves. On the palate, this magnificent red wine from Apulia is rich in fruit, elegant with balanced, soft and velvety tannins. The finish is long, dense and persistent.
Vinification of Masseria Maime Salento IGT from Tormaresca
For this pure Negroamaro, the grapes are harvested by hand at the end of September, fully ripe. The pressing is followed by maceration and alcoholic fermentation on the skins for a period of 15 days at a controlled temperature of between 26° and 28° C. The skins are then gently pumped under with a special technique that allows the gentle and uniform extraction of colour, aromas and tannins. After the skins have been removed, the wine is immediately transferred to French oak barriques, where malolactic fermentation takes place, followed by 12 months of ageing. After bottling, the wine matures for another 18 months in the bottle before being sold.
