The Merlot DO of Piedemonte shows in the glass a dark cherry red and a complex bouquet with the aromas of currants and sour cherries. Underpinning these aromas are licorice and violets with hints of bell bell pepper.
This Spanish red wine is structured and fruity on the palate with tasty sweet tannins and lively acidity with notes of black berries and red fruits.
Vinification for the Merlot DO of Piedemonte
The berries for this red wine are fermented in stainless steel vats at a controlled temperature of 25°Celsius.
Then begins the maceration period, which lasts between 10 and 12 days, depending on the characteristics of the berries. After the alcoholic and malolactic fermentation, the stabilization process of the wine is initiated, followed by its bottling.
