Vinification of the Borgo Dei Posséri Merlot Rocol

This balanced red wine from Italy is made from the grape variety Merlot. The grapes grow in optimal conditions in Trentino-Alto Adige. The vines here dig their roots deep into soils of weathered rock. After manual harvesting, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks and small wood at controlled temperatures. After the end of fermentation, the Merlot Rocol can further harmonize on the fine lees for 13 months.

This Italian is best enjoyed at a temperature of 15 - 18°C. It is perfect as an accompaniment to veal escalope with beans and tomatoes, boeuf bourguignon or braised chicken in red wine.
