Vinification of the Miguel Torres Pazo das Bruxas Albarino
The basis for the elegant Pazo das Bruxas Albarino from Galicia are grapes from the grape variety Alvarinho. After the hand harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. At the end of the fermentation, the Pazo das Bruxas Albarino is allowed to further harmonize on its fine lees for a few months.
