Vinification of Salmos by Miguel Torres
The basis for the powerful Salmos from Catalonia are grapes from the grape varieties Cariñena, Garnacha and Shiraz. In Catalonia, the vines that produce the grapes for this wine grow on soils of volcanic rock. Obviously, the Salmos is also determined by climate and viticultural style Priorat DOQ. This Spaniard can literally be called an Old World wine, which presents itself exceptionally fragrant. Once the perfect physiological ripeness is ensured, the grapes for Salmos are harvested exclusively by hand without the help of coarse and less selective full harvesters. After the hand harvest, the grapes arrive at the winery by the fastest route. Here they are selected and carefully broken up. Fermentation follows in small wood at controlled temperatures. Vinification is followed by aging for several months on the fine lees before the wine is finally drawn into bottles.
