In South Australia, the vines that produce the grapes for this wine grow on soils of clay and limestone. At optimal ripeness, the grapes for G.A.M. Shiraz McLaren Vale are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After harvesting, the grapes are immediately transported to the winery. Here they are selected and carefully broken down. This is followed by fermentation in small wood at controlled temperatures. The fermentation is followed by a maturation for 18 months in French oak barrels.
