Vinification of the Molamatta Bianco Collio by Marco Felluga
The basis for the balanced Molamatta Bianco Collio from Friuli-Venezia Giulia are grapes from the Friulano, Pinot Blanc and Ribolla Gialla grape varieties. After the grape harvest, the grapes are quickly taken to the press house. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks, small wood and bottle fermentation at controlled temperatures. Once fermentation is complete, the Molamatta Bianco Collio can continue to harmonize on the fine lees for a few months. Ageing in oak barrels is followed by a long period of bottle ageing, which makes this white wine even more complex.

This Italian white wine is best enjoyed moderately chilled at 11 - 13°C. It is perfect as an accompaniment to asparagus salad with quinoa, spaghetti with yoghurt-mint pesto or vegetable salad with beetroot.
