Vinification of Cipresso Montepulciano d'Abruzzo

The fully ripe grapes harvested by hand from the Cipresso vineyard are first destemmed, crushed and the resulting mash fermented at a controlled temperature in stainless steel tanks. The mash is then pressed and this wine matures for a while in the tanks.
