At the time of optimal ripeness, the grapes for Montepulciano Decimo Bio are harvested exclusively by hand without the use of coarse and less selective full harvesters. After the harvest, the grapes reach the winery by the fastest route. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures.
