In Veneto, the vines that produce the grapes for this wine grow on soils of volcanic rock. After the grapes are harvested, they are quickly taken to the press house. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by aging for several months on the fine lees before the wine is finally drawn into bottles.
