The Nectar Pedro Ximenez from Gonzalez Byass is a dense, sweet and pure grape variety sherry from the Spanish wine-growing region DO Jerez.
In the glass this wine shimmers in a deep, beautiful golden brown. In the nose it develops an expressive aroma of dried fruits - especially dates, figs and raisins - and blends with fine notes of oak wood. On the palate this sherry is wonderfully soft with a fine fruity, excellent sweetness. The body has a great density, which extends into the long finish with sweet, restrained liquorice spice.
Vinification of Byass Nectar Pedro Ximenez
The Pedro Ximenez grapes are carefully harvested and brought to the winery of Gonzalez Byass. This grape variety already has a natural sweetness - in order to concentrate it even further, the berries are dried in the sun for about 10 days. Then the dried grapes are gently pressed and fermented in stainless steel tanks. Finally this wine matures for 10 years in wooden barrels of the traditional Solera and Criadera system.

This sweet sherry goes well with creamy ice-cream, pudding with fresh fruit, muffins with a liquid chocolate core or small snacks - nuts and spicy cheese cubes.
