Vinification of the Binigrau Negre 2016 3.0 l double magnum

The basis for the powerful Negre 2016 3.0 l double magnum from Balearic Islands are grapes from the grape varieties Callet, Manto Negro and Merlot. After the hand harvest, the grapes arrive quickly at the winery. Here they are sorted and carefully crushed. Then fermentation takes place in small wood at controlled temperatures. Vinification is followed by aging on the fine lees for several months before the wine is finally bottled.
