Vinification of Nerosilvo by Villa Persani
The basis for the elegant Nerosilvo from Italy are grapes from the Lagrein and Teroldego varieties. The grapes grow under optimal conditions in Trentino-Alto Adige. Here, the vines dig their roots deep into soils made of clay. When they are perfectly ripe, the grapes for Nerosilvo are harvested exclusively by hand without the help of coarse and less selective machines. After the hand harvest, the grapes are quickly taken to the winery. Here they are selected and carefully broken up. Fermentation then takes place in large wood at controlled temperatures. After its end, the light-footed Nerosilvo is aged for a few more months in French oak barrels.
