Vinification of the Pizzolato Novello Igt Veneto

The elegant Novello Igt Veneto from Italy is a cuvée made from the Merlot Khorus and Cabernet Cortis grape varieties. After being harvested by hand, the grapes are quickly taken to the press house. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally bottled. Once the wine is finished, the Novello Igt Veneto is carefully harmonized.
