Vinification of Torre Fornello Olubra Brut Metodo Classico
The balanced Olubra Brut Metodo Classico from Italy is a cuvée, vinified from the grape varieties Malvasia Bianca and Marsanne. The grapes grow in optimal conditions in Emilia-Romagna. The vines here dig their roots deep into soils of clay. When perfectly ripe, the grapes for Olubra Brut Metodo Classico are harvested exclusively by hand without the use of punishing and barely selective grape harvesters. After the harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully broken up. Now follows the fermentation of the base wines. Once the cuvée has been assembled, further aging follows based on the Méthode Traditionelle. Subsequently, the Torre Fornello Olubra Brut Metodo Classico matures for several months in the bottle and is finally disgorged.
