Vinification of Orvieto Secco by Sergio Mottura
Basis for the first-class and wonderfully balanced cuvée Orvieto Secco by Sergio Mottura are Grechetto and Trebbiano grapes. In Lazio, the vines that produce the grapes for this wine grow on soils of volcanic rock. After the hand harvest, the grapes arrive at the winery by the fastest route. Here they are selected and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. Vinification is followed by aging for several months on the fine lees before the wine is finally bottled.
Serving Suggestions for Sergio Mottura Orvieto Secco
This Italian is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompanying wine to spinach gratin with almonds, omelet with salmon and fennel or cod with cucumber-mustard vegetables.
