This rosé wine clearly focuses on one grape variety, namely Aglianico. Only the best grapes were harvested for this wonderfully balanced single-varietal wine from I Capitani. When they are perfectly ripe, the grapes for the Overdose Rosato Irpinia are harvested exclusively by hand without the help of coarse and less selective machines. After manual harvesting, the grapes are quickly transported to the winery. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Once fermentation is complete, the Overdose Rosato Irpinia can continue to harmonize on the fine lees for 4 months.
